Breakfast is pretty much my favorite meal of the day, and freshly picked blueberries make it even better. It’s blueberry season here in Michigan, so here’s a roundup of some of my favorite breakfast blueberry recipes.
Blueberry Sour Cream Pancakes from Taste of Home
Mom made this recipe quite a bit when we were growing up. I’m a little ashamed to admit I haven’t made the blueberry topping yet – I will have to soon, since I still have an abundance of blueberries in my fridge. These are a little more decadent than regular pancakes, but not over the top. Perfect for breakfast or dinner.
Blueberry Scones from La Petite Brioche
I just stumbled across this recipe earlier this year, and it has quickly become a favorite. I’ve made them four times now, I think, and they turned out the best when I followed the recipe the most closely (who’d a thought?). But, if you don’t have heavy cream and have to fudge a little by mixing sour cream and milk, they still work. Fresh blueberries are definitely easier to work with than frozen, though. If you go the frozen route, be prepared for cold hands and purple dough. The end result will still taste good, though!
These next two did not start off as blueberry recipes, but they can be made with basically any fruit, so why not blueberries? I made them with the fruit listed first, but then, since I had a glut of blueberries, I adapted them. The hubby liked the bars better with the blueberries (I would have a hard time choosing a favorite – both were fabulous). The granola bake definitely looked prettier with apples, since in the blueberry version the granola became partially submerged in the fruit, but again, you can’t go wrong here.
